If I had to choose only one food to eat all summer (besides ice cream) it would be tomatoes. There is nothing quite like picking a warm, ripe, sweet tomato fresh from your own garden and eating it for dinner. I love them so much that I planted 32 tomato plants in my garden this year! In a few weeks, I’ll have more than I know what to do with but that’s okay by me!
My favorite way to prepare and eat tomatoes is in a caprese salad.. so simple with fresh basil, creamy mozzarella and balsamic glaze. It’s the perfect side for weeknight dinners and easy to make in larger quantities for your next cookout!
Caprese Salad
Ingredients
1 Heirloom tomato
1 Mozzarella ball
Fresh basil leaves
Balsamic glaze or olive oil/balsamic vinegar
Salt and pepper to taste
DIRECTIONS: Thickly slice the tomato and mozzarella. Arrange tomato slices on a place and top each with a slice of mozzarella and then 1 basil leaf. Drizzle balsamic glaze (I love this one from Wegmans) or olive oil and balsamic vinegar over salad. Finish with salt and pepper to taste. And that’s it!
So easy. So simple. So delicious.
