Reserved for cozy weekend mornings, this recipe is our favorite (and I’ve trialed LOTS of pancake recipes and mixes over the years). The pancakes are made with healthier ingredients, are fluffy, and taste delicious. The added protein leaves you feeling full much longer than traditional pancakes which consist mostly of empty carbohydrates. Plus, leftovers freeze well and make for a quick weekday breakfast for my son.

Protein Pancakes
2 scoops vanilla protein powder
1 1/4 cups flour (all purpose or oat)
1/4 cup coconut sugar
1 tablespoon baking powder
2 teaspoons baking soda
1 1/2 cups buttermilk (add 1 1/2 cups milk and 2 tablespoons white vinegar to measuring cup and allow to sit for 5 minutes)
2 eggs
1 teaspoon pure vanilla extract
1/2 cup melted coconut oil, cooled to room temperature
Butter and pure maple syrup, for serving
Directions: As stated above, combine milk and white vinegar in a cup and allow to sit for approximately 5 minutes until lumpy. Combine protein powder, flour, coconut sugar, baking power and baking soda in a large mixing bowl. Add buttermilk, eggs and vanilla extract to dry mixture and whisk to combine. Finally, add coconut oil and whisk to combine. Allow batter to sit for approximately 5-10 minutes before cooking.
Heat griddle or non-stick skillet until hot and add 1/8-1/4 cup of batter to the pan (more or less batter depending on size of pancake you desire). Cook on first side for about 2 minutes or until small bubbles form on the top of the pancakes. Flip and cook for about 2 more minutes on the second side before transferring to plate.
Top with butter and maple syrup and enjoy!
** Add in options: Add mini chocolate chips, blueberries (my favorite) or sliced bananas to batter before cooking.
** Serving options: Top with Greek yogurt and mixed berries for a healthier option or whipped cream and chocolate chips for a special treat.
** Storage: Allow leftover pancakes to cook completely, place in plastic bag or container and freeze. For a quick weekday breakfast, pop a frozen pancake in the toaster before enjoying.
